It’s only a matter of time until you get around to chasing the perfect sear, which inevitably leads to the torch. A lot of people don’t like the gas taste that can be left when using the torch (especially after they find out it’s there). This is a torch attachment designed to deliver the temperature for a perfect sear via two layers of wire mesh in the form of a screen. The blowtorch flame hits that wire and creates a consistently spread flame for even cooking at a very high temperature.
